Carrot Cake Overnight Oats

Carrot cake has always been something I’ve loved, I have so many memories of mum cooking up a cake with us. So I turned my favourite cake flavour into an overnight oats mix.

£0.22     Ready in 5 mins     Serves 1

All you need is

  • 3 tbsp low-fat yoghurt
  • Splash of milk
  • 1 small carrot
  • 4 walnuts (optional)
  • 1 tsp cinnamon
  • 1 tsp chia seeds
  • 6 tbsp oats

To make it just

  1. Peel and top and tail your carrot then grate it into a bowl or straight into your jar
  2. Add the oats, carrot (if not already in there), chia seeds and cinnamon to your oat jar
  3. Crush the walnuts with a rolling pin in a plastic bag then add to the jar
  4. Top with the yoghurt and mix well, ensuring everything is covered
  5. Top the jar up with milk then leave in the fridge overnight
