A Taste of Summer With M&S – Salads

Summer, the time of year when we all start to take off far too many layers of clothing and relaxing in the glorious sunshine, while – at least in the UK – simultaneously avoiding unwanted rain showers.

My favourite part of summertime? The food. During the summer we have more options for dinner, many of which mean not having to slave over a hot stove and instead enjoy the weather and consume copious amounts of alcohol.

So, when Marks and Spencers asked me if I wanted to try some of their new summer recipes, I couldn’t resist.

After carrying bags of food through the middle of Southampton City Centre I got home and began to put away the delights I’d be given.

Dish number 1: Strawberry & Manchego Salad

There are 2 things about this dish which, when I was creating it, didn’t sit right for me. 1) strawberries and 2) basil leaves. Neither of which I’d ever had in a salad. This being said, once I sat down and added the dressing, I found myself wanting more.

The salad was refreshing, sweet, sour and flavourful all at once. How I’ve got this far in life without adding fruit to a salad I truly don’t know. This dish was so easy to create, ready from fridge to plate in under 5 minutes.

Dish number 2: Avocado, Strawberry & Halloumi Salad

The halloumi worked as a great crunchy addition and complimented the avocado nicely. The only thing for me was that due to using rocket instead of mixed leaves it seemed a bit empty on the plate. However, that’s a minor issue which is super simple to resolve (add more food).

This salad was far sweeter than the other one due to the addition of pomegranate seeds as well as strawberries. This was by far my favourite part of the dish. You’d be eating basil leaves and a slice of avocado then feel a slight crunch and your mouth explodes with the sweetness of pomegranate seeds.
