Beef Kebab Gyros

£0.46    40 mins (plus overnight in the fridge)    Makes 4

Following my chat with Benjamin from Mob Kitchen for my second podcast I had a major urge to make gyros for dinner. So I learnt from the Mob’s recipe and adapted it to my own version for a low cost easy dinner.

All you for the kebabs

  • 125g beef mince
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp mixed herbs
  • 1 tsp garlic
  • 1 egg
  • 1 slice of bread (or 50g breadcrumbs)
  • 3 tbsp. natural yogurt

All you need for the tzatziki is

  • 3 tbsp. natural yogurt
  • 40g cucumber
  • large handful of mint
  • 1/2 lemon rind and juice

All you need for the salad is

  • Handful lettuce leaves
  • Some slices of cucumber
  • 1/2 red onion sliced
  • 1/2 red pepper sliced
  • 4 wholemeal wraps

To make the kebabs just

  1. Blitz the bread and place crumbs into a bowl, add the mince, egg and seasoning combining well.
  2. Split the mixture into 8 equal balls then roll into sausage shapes.
  3. Wrap each one individually tightly in clingfilm then leave overnight in the fridge.
  4. When ready to start cooking, place the yogurt in a bowl and add the mince sausages unwrapped.
  5. Cover with the yogurt carefully so they don’t fall apart then cover bowl with clingfilm and leave for 10 minutes in the fridge while you prep everything else.

To make the tzatziki just

  1. Finely dice the mint leaves and place in a bowl, add the yogurt and lemon.
  2. Finely chop the cucumber and add mixing well. Set aside or leave in the fridge until serving.

To finish the dish just

  1. Heat a pan and add a small amount of oil if non-stick.
  2. Remove the mince from the yogurt marinade and fry.
  3. While that’s cooking prep the salad and place in a bowl on the table.
  4. Once mince in cooked through place in a bowl on the table.
  5. Add the tzatziki and wraps then dig in!

Oh my god these sound incredible!! I can’t eat beef unfortunately so I’d have to make it with a different meat or maybe even falafel but my gosh the flavourings sound so yummy! I’m a sucker for a kebab 🙂
