When it comes to Christmas I always look forward to leftovers. Mostly because I love cheese and pickle and cold meats and that’s normally all that’s left. Well, that and some veg. But this year why not try something other than a turkey sandwich with your leftovers?
Sprout egg bake
All you need is: sprouts, eggs, carrots, parsnips, seasoning, cranberry sauce and ham.
To make it just: chop the sprouts, carrots and parsnips into chunks then fry lightly in a small amount of oil, then add the ham and mix well. Make several wells in the mixture and crack in the eggs. Cover and bake for 5 minutes. Top with some cranberry sauce and serve.
Cheesy mashed potatoes
All you need is: roast potatoes, carrots, cheese, breadcrumbs and seasoning.
To make it just: mash the potatoes and carrots until they combine together into a smooth paste. Mix in the cheese and breadcrumbs as well as seasoning and bind until it forms a dough. Mould into circles then fry gently on each side until golden or place in the oven.
All you need is: turkey, mixed leaves, roast potatoes, carrots, parsnips, sprouts, cranberry sauce and fresh cranberries (optional)
To make it just: cut the turkey into thin strips, place in a bowl, add the leaves then chop the vegetables and potatoes into chunks. Add in a generous amount of cranberry sauce and mix well coating all ingredients.
