Noodle Bowl

When it comes to eating healthy, I find the more colour the better. And this dish is inspired by that exact thought. It’s a combination of flavours and colours to give you a tasty meal which is super healthy and cheap.

All you need is

  • 1 tin haricot beans
  • 1 red onion
  • 3 button mushrooms
  • 1 handfuls spinach
  • 100g frozen vegetables
  • 300g noodles

For the sauce

  • 1 tbsp soy sauce
  • 1 tsp five spice
  • 1 tsp garlic powder
  • ¼ tsp chilli flakes
  • 1 tsp sesame seeds

To make it just

  1. Place the noodles in a bowl and cover with boiling water.
  2. Next heat a frying pan and bring a small pan of water to the boil.
  3. Finely slice the red onion and mushrooms and fry in the warmed frying pan with the haricot beans.
  4. In the pan of boiling water place the spinach and frozen veggies.
  5. Once all elements are cooked place into a bowl.
  6. In a small saucepan combine all the ingredients for the sauce and warm through before pouring over the bowl of ingredients.
  7. Tuck in!
