Vegetarian Bolognese

£1.45     10 minutes     Serves 4

Vegetarian food doesn’t have to include ‘fake’ meat, beans and pulses make great fillers for dinners. This Bolognese was super quick to whip up and is filled with vitamins and minerals to give you a healthy dinner tonight.

All you need is

  • 500g passata
  • 200g baked beans
  • 42g lentils
  • 1 tbsp mixed herbs
  • 1 tsp olive oil
  • 1 tbsp ketchup
  • 3 mushrooms
  • 1 carrot
  • ½ bell pepper
  • 2 garlic cloves
  • 1 red onion

To make it just

  1. Slice the mushrooms, carrot and red onion into small chunks, peel and finely chop the garlic cloves.
  2. In a saucepan combine all ingredients, leave to simmer for 7-8 minutes on a medium heat.
  3. Once cooked either enjoy with wholewheat spaghetti for dinner or leave to cool and freeze into portions for a later date.

Tip: for an added health kick, serve with sliced avocado and wholemeal spaghetti.
