Tomato Puree Pasta

After cooking up some pasta I realised I didn’t have much to make it into a meal, so in an attempt to cook up a tasty lunch for myself I let the pasta go cold before adding a random amount of food. The end result was a stunning mix of flavours which created a perfect lunch.
All you need is
  • 75 g cold wholewheat pasta
  • 1 tbsp tomato puree
  • 1 carrot
  • 1/2 red pepper
  • 10g cheddar cheese
  • Handful salad leaves
To make it just
  1. Boil and cook the pasta before allowing to go cold.
  2. In the saucepan top the pasta with a tablespoon of tomato puree, then add the carrot, red pepper, cheese and salad leaves all chopped up.
  3. Mix well so the puree covers everything in the dish before tucking in.
