Quinoa topped mega mushrooms

Portobello mushrooms are great as a side or lunch due to being so big and filling, top with this quinoa mix and you’ve got a healthy dish set, with added superfoods. 

All you need is

  • 1 portobello mushroom
  • 100g quinoa
  • 1 tomato
  • ¼ red onion
  • 1 tablespoon melted butter
  • 2 teaspoons garlic and herb cheese spread
  • ½ garlic clove crushed
  • 50g spinach

To make it just

  1. Cook the quinoa according to packet instructions.
  2. In a bowl place the spinach then top with hot quinoa mix well so the spinach wilts down. Add the crushed garlic, chopped tomato and red onion.  Mix in the cheese spread then add the melted butter. Mix all well then top the mushroom and cook for 20 minutes.
