Feta and pine nut salad

When it comes to salad we are more inclined to eat them in summer but they are so light and healthy that they are ideal to eat when you want a break from soup and pies.

All you need is

  • 10g feta cheese
  • 2 cherry tomatoes
  • ¼ red pepper
  • 2 new potatoes
  • 1 tsp paprika
  • 2 Lettuce leaves
  • Handful Spinach
  • 1 carrot
  • 1 tsp pine nuts

For the sauce

  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp mustard

To make it just

  1. Chop the potatoes and place in a bowl and top with water then place in a microwave for 4 minutes.
  2. Whilst the potatoes are cooking chop the red pepper, tomato and feta cheese and place on top of the lettuce and spinach.
  3. After 4 minutes drain the potatoes of any leftover whatever and then add the paprika and mix well before adding to the salad.
  4. In a cup combine the ingredients for the dressing well before drizzling over the top along with the pine nuts.
