Faiths budget meal:
Courgette and onion bake
All you need is
200g red lentils
1 vegetable stock cube
To make it just
Fry the onion until soft, the slice the courgette and add to the onion to cook for a further few minutes.
Add the lentils and water to the pan before crumbling over the vegetable stock and mixing well.
Simmer for 15 minutes until lentils are soft and pulpy.
Season and serve with either new potatoes or soft crusty bread and some grated cheddar cheese on top.
