They say breakfast is the most important meal of the day, however for some reason people always seem to have much bland breakfasts’ so I created these easy and delicious breakfast muffins (okay, so they are basically just omelettes in muffin cases but they seem to taste so much better) they’re easy to make and super quick, you can also have them cold as a snack.
All you need is
- 2 eggs
- 3 baby tomatoes
- 1/4 red pepper
- 1 spring onion
- 10g cheddar cheese
- 30ml milk
To make it just
- In a jug combine all the ingredients, ensuring they’re cut up into small cubes.
- Oil a muffin tray ready to put the mixture into.
- Pour the mixture into the muffin tray trying to keep them all around the same size.
- Allow to bake on a medium head for 10 minutes, before either enjoying hot or leaving to cool.
